Top Chef: Just Desserts: Wedding Cake Advice From Sylvia Weinstock

October 01, 2010 08:00 AM by Rebecca Ford

This past week on Top Chef: Just Desserts, the queen of wedding cakes, Sylvia Weinstock stopped by the judge the competition. Read on to hear advice from a woman that knows everything about cake.

Not only did Sylvia Weinstock judge the competition on Top Chef: Just Desserts this past week, but she even took on the role of consoling grandmother when one contestants cake decided to fall apart right before judging.

She gave the contestant great advice: ““It’s not death, only cake.”

Weinstock bakes more than 500 cakes (more like works of art) per year, and has created cakes for many celebrities. She’s been called the Leonardo da Vinci of cakes.

Here’s some advice she gave on The Martha Stewart Show for your own wedding cake:

  • Visit reputable bakers and sample their cakes.
  • If your special day falls in the winter or is a dinner celebration, a richer cake may be more satisfying. Try chocolate or hazelnut.
  • If your wedding is a daytime event in warmer weather, serve a lighter cake, such as lemon-curd cream with fresh raspberries.
  • Variety is the key. The wedding couple can opt to make each layer a different flavor. This will benefit your guests who are picky eaters.
