Koff explains how to naturally preserve your food in her blog below.
Your freezer! Yes, the Shedders know that one of the best ways to ensure they always get a healthy eating occasion – stock their freezer with frozen organic foods. Because freezing preserves the freshness and the nutrients – frozen fruits, veggies, meats, grains, nuts & seeds and spices retain their nutrient value and flavor for a long time. So one of the first things that I taught Shedders is to make sure they have all of these in their freezer to assemble a quick eating occasion, provide quality ingredients for when they want to cook creatively in the kitchen, and even to upgrade the health (and portion size) of take-out or delivery food.
Not sure about the quality of the meat that comes on a pizza? Skip it and add your own organic chicken sausage slices (from the freezer) to make healthier pepperoni.
Want a quick dinner but got home a little late? Try a dinner frittata with all your frozen organic veggies, spices, and some organic egg whites this dish takes under 2 minutes and satisfies!
Did you know that nuts have healthy fats in them…and that those fats go bad if exposed to air and heat. Store them in your freezer and add them to a salad, a cereal, or just pack into a small container with a whole grain cereal for an on-the-go, nutrient-balanced eating occasion.
Now not all frozen foods are created equal. Be wary of ones that still use sugar and salt to add flavor (they don’t need them as preservatives because the freezing part is the preservative) and also veggies with high fat sauces. And remember that just because a brand name starts with “lean” or “healthy” or “lite” doesn’t mean that the product actually is – you have to flip the package over and read the ingredients AND the nutrition fact panel too.
