Next, the chefs find out they will work together as one team to prepare steak for a four-course beef menu at an annual cattle-theme ball. Host Padma Lakshmi tells the chefs they have three hours tonight to menu plan for 200 people followed by three hours to prep and then three hours to prep and cook for the actual ball the next day. The event is being held at the Southfork Ranch, home of the hit soap opera Dallas. One by one each chef works on what they will be preparing for the diner. Guest judge Chef Dean Fearing tells the chefs specifically that the steaks need to be cooked medium.

While getting ready, Ty cuts his finger and spends all night in the emergency room. Since Ty’s specialty is steaks, he has been the one chosen to cook the steaks–the focal point of the dish. He is injured and sleep deprived but vows to do his best. All of the chefs are busy cooking in the kitchen but there is a mishap during the third course and they realize that the steaks were overcooked.

During the judges panel with Chef’s Tom Colicchio, Hugh Acheson and guest judge Dean Fearing; Heather is selected as the winner and receives this week’s prize–a new car! The judges choose to eliminate Whitney Otawka for her undercooked potatoes. Whitney and the other eliminated chefs have the opportunity to win back a spot on the Top Chef finale.
