What is the first dish you ever mastered?
The first dish I ever mastered was the basic cheese omelet. Tri-folded, fluffy, moist on the inside, beautiful yellow color with no brown on the outside. It’s a lot harder than you think!

What is your signature dish?
Grilled rack of lamb with rosemary pomme puree (potato puree), haricot vert, roasted plum tomato, and a red wine demiglaze.

Who was your first cooking inspiration?
The person who inspired me the most about cooking isn’t one person. It’s Mac, Evan, Dan, Mike, and Stewart from Laurel Creek Country Club. Those are the first chefs I ever worked with, and each of them inspired me in a different way to continue in this field. I had five creative, intelligent chefs giving me the best foundation to be successful in the field of Culinary Arts, and I thank them for all that they did to get me to where I am now, a Culinary Teacher. Teaching just like they taught me!
