What was your first job in a kitchen?
My first cooking job was at a snack bar in a bowling alley. Pretty rough! I often worked from 6pm to 2am.
What is the first dish you ever mastered?
I would have to say it would be the almighty quesadilla. Seasoned properly with quality ingredients and wood grilled, it might possibly be the best thing ever!
What is your signature dish?
Hoisin and honey-glazed duck confit with sweet and sticky rice, mango, cashews, and young coconut milk.
Who was your first cooking inspiration?
I would have to say the late, great Julia Childs was my first introduction to the world of food. She showed me that food is love!
